INGREDIENTS:
- 1.5 cup Sistry’s Jalapeno Cilantro
- 2 cup zucchini (ribbon)
- 2 cups hummus
- 2 cups quinoa
- Basil
- Carrots
- Bell peppers
- Avocado
DIRECTIONS:
- Cook quinoa according to package directions, set aside.
- Mix Sistry’s Jalapeno Cilantro with hummus, set aside.
- Using a mandoline, cut ribbons of zucchini, set aside.
- Mix the hummus and quinoa together.
- Place ribbons of zucchini flat and spread the hummus/quinoa mixture on top.
- Place basil, bell peppers, carrots and avocado on one end and roll up.
- For extra flavor, dip each roll into Sistry’s Chili Chipotle and enjoy!
